Juicer pulp #buckwheat #muffins. These are FULL of #veggies, and I used @vega_team natural nutritional powder and seeds to add in some #protein! A lovely experiment with a tasty result! Although this recipe has not been perfected, I will provide the measurements I used.3/4 cup juicer pulp1/4 cup raw agave nectar1/4 cup coconut oil1/4 cup organic unsweetened applesauce 1 cup buckwheat flour ( See note)1 packet Vega natural nutritional powder (this is about 1/2 cup)1 t baking soda1 T cinnamon1 T pumpkin seeds1 T sunflower seeds1/4 cup raisinsCombine wet ingredients and dry ingredients separately. Combine them, then add almond milk until desired consistency is reached. Bake at 350 degrees for about 20 minutes. These taste great with almond butter and jam! Note: Buckwheat flour has a strong flavor, so I would use gluten-free oat flour next time!
